Black Bean Soup
Description:
Black bean soup. Takes about 40 minutes to prepare.

Black Beans (15 oz each) |

Directions:
- In a soup pot, cook onions and carrots in olive oil until the onions start to turn translucent (about 5-6 minutes)
- Add garlic and cook for 1-2 minutes, stirring frequently
- Add serranos and red wine and bring to a boil
- Cook until the wine is reduced by half
- Add beans and chicken stock and cook on medium for about 20 minutes
- Add lime juice, and season with salt and pepper to taste
- Blend half of the soup and return it to the pot
- Bring soup back to a simmer and then serve with relish and sour cream
