Cashew Chicken

Baked chicken with a cashew coating.

| 1 | c. | Cashews (Roasted) |
| 3 | Tbsp. | Cilantro (chopped) |
| 1/4 | c. | Olive Oil |
| 4 | cloves | Garlic |
| 2 | Tbsp. | Soy Sauce |
| 1 | Tbsp. | Brown Sugar |
| 1 | Jalapeno Pepper (remove seeds and membrane to control heat) | |
| 2 | Tbsp. | Lime Juice |
| 2 | Tbsp. | Water |
Directions:
- Season chicken breasts with salt and pepper
- Blend all other ingredients
- Coat chicken and refrigerate for about 2 hours
- Remove chicken from fridge and bring to room temperature
- Bake at 350 F. (or grill) until the internal temperature reaches 165 F.
