Checca Sauce
Description:
A raw tomato sauce with basil and mozzarella. Perfect for a hot
day during tomato season.

1 | oz. | Parmesan |
4 | oz. | Mozzarella (in small cubes) |
1 | Tbsp. | Extra Virgin Olive Oil |

Directions:
- Combine first five ingredients in a food processor and pulse just until the tomatoes start to break up (do no puree)
- Pour tomato mixture into a bowl
- Add olive oil, salt, and pepper; mix well
