Harissa Sauce

Description: An african chili sauce. You can make it by soaking dried chilis for half and hour, then blending them up with some olive oil and the other ingredients below. I cheat and use a chinese garlic chili paste as a base. I use this with my lamb stew, but it can be added to just about anything that needs a extra little heat.
Yield: 1/4 cup.

Qty Unit Ingredient
1/4 c. Garlic Chili Paste (Chilis, garlic, salt)
1 tsp. Ground Cumin
1 tsp. Ground Corriander
1/2 tsp. Ground Caraway

Directions:

  1. Combine all ingredients and mix well.
