Peach Upside-down Cakes

Description: Individual peach upside-down cakes.
Yield: 2 servings


Peache Topping

Qty Unit Ingredient
2 Tbsp. Butter (cubed)
1/4 c. Brown Sugar
1 Peach
1/2 tsp. Cinnamon

Directions:

  1. Spread butter cubes in 2 6-oz ramekins
  2. Add brown sugar
  3. Chop peach into small chunks and layer evenly over brown sugar
  4. Sprinkle with cinnamon

Cake

Qty Unit Ingredient
1/2 c. Flour
1/3 c. Sugar
1 tsp. Baking Powder
1/8 tsp. Baking Soda
1/8 tsp. Kosher Salt
1 Tbsp. Butter (melted)
1/2 c. Buttermilk (room temperature)
1/2 tsp. Vanilla

Directions:

  1. Whisk together flour, sugar, salt, baking powder, baking soda, and salt
  2. Whisk together melted butter, buttermilk, and vanilla
  3. Combine wet and dry ingredients and mix just until incorporated
  4. Pour batter over peaches in ramekins
  5. Bake at 350 F. 20 to 25 minutes.
