Sizzling Chicken and Cheese

Chicken breasts baked with cheese, onions, and red bell peppers.

| Olive Oil | ||
| 1 | c. | Onion (sliced) |
| 1 | c. | Red Bell Pepper (sliced) |
| 1 1/2 | c. | Cheddar Cheese (shredded) |
Directions:
- Season chicken breasts with salt and pepper (or other poultry season)
- Dredge chicken in flour, brush off excess flour
- Heat an oven-safe skillet over medium heat with just enough olive oil to coat the bottom
- Brown chicken in skillet on both sides
- Add sliced onions and bell pepper, cover with lid, and bake at 350 F. for 15 minutes (until juices run clear)
- Remove from oven, cover chicken with cheese, replace lid, and let cheese melt for 3 minutes
- Serve
