Rice with saffron, bacon, and bell pepper.

|1/2||c.||Red Bell Pepper (chopped)|
- In a large pot, cook onion, bell pepper, and bacon until bacon begins to crisp
- Add rice and chicken broth and bring to a boil
- Add saffron, salt, and pepper
- Reduce heat and simmer, stirring regularly until the rice is cooked and has absorbed the broth (about 15-20 minutes)
